Dear Gluten,
When i was 18 i had my gallbladder out, and ever since than i have been plagued by gas, bloating, stomach cramping and diarrhea on a daily if not hourly basis. I have been afraid to leave my house at times and once upon a time my friends thought i was bulimic because i always got up from the table during a meal. My mon and mema both have the same problems, so i figured just learn to live with the pain.
So recently i have been suffering from severe exhaustion, so much to the point that it is sometimes difficult to get out of bed. So i started reading, and reading, and i came across gluten intolerance. I remembered how i always feel better when i am on Atkins, and avoid carbs, so i decided to do a 21 day experiment...
After 4 days of being gluten free, i have had only one episode of symptoms, when i licked and envelope (gluten is used in glue). So, needless to say i am passing on what i have learned with my family and others....So, bread, and pasta, i love you....but you have to go....Cake, i will miss you the most...Gluten, you can suck it...Love, Shea
